who here eats the roe, and do you scramble it, over easy, or just put it on crackers?

I was watching Bizzare foods and Andrew Zimmern ate some kind of fish food... I think it was roe, soaked in a sperm sauce from the same kind of fish.

LOL I did too when I saw it. That crosses a line I can't touch. He was having a meal with his dad at some fancy restaurant.

but, aside from the 'sauce' they used... the roe itself I could eat.

So I got my eggs out of the cure container and onto a drying sheet. They smell like a freshly opened jar of Pautzke's balls of fire, so I guess I'm doing something right. However, they are very pungent and have filled the garage with their unique aroma......which, I have found, my wife is not fond of in the least.......this leads me to ask, do you dry them outside? If so, how how long do you dry them and do you have any problems with critters getting into them?
I thought about leaving them on the woodpile last night, but was worried that rats or coons might think I was serving hors d'oeuvres. :chef:

Dustin, I've eaten salmon roe. It's a regular item on sushi menus. I'm always willing to try something once. Although I really like flying fish roe (small orange roe), I really disliked the salmon roe....way too fishy for me and the texture of having those little things pop and ooze in my mouth was not pleasant :-& . Haven't had it since. I'd rather use it for bait. :tongue:

Well, I left these things out all last night and all day while at work....they are now gummy eggs. It's like gooey juice filled smelly candy. I had to scrape them off the cookie sheet with a spatula. They do look like pretty good nuggets though, so I dusted them with borax, put them in tuperware and into the freezer. I might have over-dried them a bit.

I cured my first batch last night. I think a lot of people are doing the same. I had to call all around town to find any cure after going to 2 stores that are usually stocked. Once again for me Kmart of all places came through in a pinch. They had Fire Cure. So the pink eggs are in the fridge.
