8/23/2015 5:13:00 PMThe recipe I used was 2 cups dark brown sugar, and one cup kosher salt. Cut salmon into strips, and let brine for 4-8 hrs. Rinse and let dry for a few hours, then brush with real maple syrup. Smoke until it is as firm as you like it. Baste with maple syrup every thirty minutes for the first couple hours. Because the strips are small, it only took 3-4hrs for me at 180-200 degrees.
