Just another Salmon recipe for everyone...
INGREDIENTS:
Salmon- (1) two to three pound fillet...Just about any type of salmon should be good, this time I used Sockeye
4 tbsp. or more of Rub (see ingredients below)
Mayonnaise
Charcoal (for those who use it)
Wood chips- You can try any wood (hickory, mesquite, apple, etc., etc.)...I used hickory for this one.
RUB:
3 tbsp. kosher salt
2 tbsp. sugar
1 tbsp. light or dark brown sugar
2 tsp. ground black pepper
2 tsp. celery seed
2 tsp. paprika
2 tsp. garlic powder
1 tsp. cayenne
1 tsp. onion powder
1/2 tsp. chili powder
1/4 tsp. ground cumin
1/4 tsp. ground fennel seed
1. Combine all the rub ingredients and sprinkle several tablespoons on the flesh side of the fish. Once rub is on the fish, place in fridge until ready to cook. Before placing on grill smear a light coat of mayonnaise on flesh side of fish.
2. When your coals are ashed over, or with the gas grill at Medium, add a handful of soaked wood chips.
3. Place the fillet on aluminum foil, then the cooking rack skin-side down. Cooking time will vary anywhere from 15 minutes to 1 hour (dependent upon temperature and size of fillets...20 (+/- 5 minutes) minutes was enough for a 2lb. fillet).
As you can tell by the ingredients of the rub, it is spicy...which of course, it is. You can scale back...or even eliminate the spices that make it so spicy (Cayenne, Chili Powder). Even as spicy as it was, the rub can be scraped off the fish once its cooked and eaten without. I found leaving some on it was spicy, but not completely overwhelming. The kids ate it, however...they scraped off the rub so it wasn't so spicy. Enjoy!!
